This soup is nutritious and delicious. You will need a can of chopped tomatoes or fresh tomatoes, half a cup of olive oil, two stalks of chopped celery, a chopped onion, a chopped carrot, a clove of minced garlic, chicken or vegetable broth a tablespoon of butter and the whole wheat past of your choice. A thicker past such as ziti or orzo will add body to the finished soup. Strain the tomatoes and then place in a 450 oven with a bit of olive oil on top. Don't throw away the juice. Boil the whole wheat pasta and drain. Brown the celery, onion, carrot and garlic. Combine the vegetables with the roasted tomatoes, tomato juice, chicken or vegetable broth, and butter. Let the entire mixture simmer for fifteen minutes. Puree the finished mixture. Add the cooked whole wheat pasta to the soup and serve hot.
